TUNA PATTIES IN TOMATO

Ingredients:
200g canned tuna
1 onion
2 garlic cloves
120g stale bread
1 egg
500ml homemade tomato puree
1 teaspoon ground chili pepper
2 tbsp flour
SOLIA FIT oil
300g penne pasta
Herbs de Province mix or Mediterranean herb mix,
Ground pepper
fresh parsley


Preparation:
Take tuna out of the can and drain of oil or water. Finely chop onion and garlic in a kitchen blender. Soak bread in water, then drain well and tear. In a deeper dish mix tuna, bread, ground pepper, egg, onion and garlic and whichever spices you like. Thoroughly mix all the ingredients with your hands and shape into patties. Cook the patties in shallow SOLIA FIT oil on all sides until they are nice and golden and then take them out on a paper towel to drain excess oil. In a separate dish pour 100ml of oil, add flour and fry for one minute. Next add tomato paste and 300ml water. Add spices to your liking and continue to cook the sauce until it thickens, constantly stirring. When the sauce is done, place patties in it and cook for some 10 minutes more, stirring from time to time. Cook penne according to the directions and serve with the patties. Garnish with parsley. These patties are also a great accompaniment to mashed potatoes, boiled rice or any other side dish.
